Gluten Free Maamoul (Vegan, Gluten Free, Dairy Free)

celéac corner, Recipes

Maamoul are a traditional Lebanese dessert that’s especially popular around Easter time.  They are a Lebanese pastry that come in several fillings ranging from dates, pistachios, to walnuts and more. My personal favorites are the date filled ones. My mom used to always bake dozens upon dozens of batches but after I got diagnosed with celiac, it got a little harder and took me some time to figure out a recipe that I liked. This year, I finally whipped something up that I thought would be worthy of sharing with the rest of y’all and it’s actually quite easy. They taste just about the same as the originals and can definitely satisfy your sweet tooth without the added sugar.

I guess I made it very clear, that this post is going to be about pizza.

Makeup Eraser Hack : How to remove your makeup in ONE easy step

celéac corner, Lifestyle
I hate removing my makeup especially after a long night when all you want to do is sleep.
I always try to find the easiest yet most effective ways to remove my makeup. A while ago, I came across the Makeup Eraser at my local Sephora store. But this thing is sold at 24 Canadian dollars… for ONE cloth. I don’t know about you but..sorry I am not spending 24 dollars on one cloth.

Five Tips on living with an autoimmune disease

celéac corner
Living with an autoimmune disease has definitely had it’s challenges. After getting diagnosed, it made me realize just how much we take our health for granted. There were definitely some major adjustments to be made but with that being said, I found that it is very possible to lead a happy and healthy life if you take the right precautions. Here are 5 tips that I believe are necessary and that have helped me in regaining my health back.
1. Adjust your diet
Opt for organic produce and do your research for some gluten free alternatives.
I cannot stress this one enough. This is the first and most important step after being diagnosed with Celiac Disease. Adapting my diet based on a lifetime condition was overwhelming and not to mention emotional when I first started my journey. What I have to say is, do not let that discourage you as there are many gluten free options out there, you just have to look in the right places!
I personally found that smaller scale organic food stores such as Fresh and Wild worked best for me. Fresh and Wild really aligned with my lifestyle seeing as my diet requires me to eat a ton of fresh and organic produce. Fresh and wild is located in the Toronto area and has two locations. The first is located at King and Spadina, and the second is located in Bloor West Village. This grocery store offers a variety of organic produce as well as many gluten free alternatives such as Bob’s Red Mill gluten free flours, my personal favourite! You can also find your favorite comfort foods, such as gluten free breaded (I repeat, breaded!!) chicken wings. This is exciting especially because most restaurants cannot provide us with that option! This makes for a perfect one stop shop because you can get all of your groceries at once. To top it off, they have the cutest cafe serving organic and fair trade coffee! 🙂
2. Supplement adequately

Being Constantly Connected and Quick Self Care

celéac corner

No one can deny the progress and advantages technology has provided us within the last 10 years. Whether it’s in the medical field, in the educational system or in the obvious day-to-day life, technology has altered much of what was previously unnecessary behaviors into an automatic stream of habits we don’t need to think twice about. For many, waking up in the morning and checking our cell phones or emails is automatic. I personally pull out my phone whenever I am wondering about a specific question. “Where have I seen this actress before?”. “What’s this song again?”, “How do I get to this place?”, etc.

One of the awesome thing about technology is that you can pretty much reach anybody. I love being able to call my grandparents overseas without worrying about minutes and fees, and being able to keep in touch with my friends and cousins. It makes everything so much easier!

But of course, everything has a bad side. Keeping connections with old friends and relatives is great, but what about the people that we don’t want to keep in touch with at all? Or what about the people who we shouldn’t be keeping in touch with, really for our own well-being, but can’t really get rid of without apparently transgressing some kind of new social norms?
In the past, once you’ve met somebody, I’m assuming all you did was exchange numbers. If you liked the person, as a friend or otherwise, you got in contact with them and kept the friendship going. If not, you just ignored their calls and the odds of them getting back in touch with you or knowing anything about your life was likely via word of mouth and gossip. Obviously, things have changed since then. We grew up with facebook, or MySpace, or whatever. We added all these people from school or work on our social media realms, whether we were friends or not, and they just stayed there. We’re forced to keep up with what our acquaintances or friends are up to, whether you like it or not. And it’s very hard to not compare yourself with other people’s lives. Sometimes, we almost feel like we’re falling behind. But realistically, we all have our own timeline. I totally agree that it’s pretty awesome to have your shit together. However, we forget that you can appear to have your shit together and not really have anything accomplished. We forget that we create this online alter-ego, only showing people the best parts of our lives. And consequently, we forget that our counterparts do the same.

Now, if you are simply comparing yourself to another person to seek inspiration or motivation, fine. That’s not a big deal, as long as you’re doing it for yourself and nobody else, okay. I’m with you on that. But if you begin to turn this energy into a negative one, where you are either harming yourself (physically, emotionally, or otherwise) by putting yourself down, or harming others by putting them down, then there’s an issue.

Cyberbullying is unfortunately not something that only happens in high school.  It’s not only celebrities or YouTube stars that get negative comments. It’s “regular” individuals going about their daily lives, accomplishing goals and inspiring others whether they know it or not. This is where being connected all the time gets ugly. When we make these social connections online, we are not forced to stay friends with people in real life. We aren’t even forced to stay friends with them online. So why does it feel like we have to stay friends with someone who is posting negative comments on someone else’s profile? How am I supposed to be supportive of this person’s ambitions and business if they’re an asshole? However, we are not obliged to stay “friends” with people who upset us and make us feel bad about ourselves. You’d likely not want to hang out or catch up with that person in real life, so why bother to stay up to date with their lives online? I think it’s our sense of curiosity that keeps us intrigued. But it shouldn’t.

TL;DR: If someone is being mean to you online, just delete and block them. You don’t need that shit in your life. And you’re not being petty, you’re just taking care of yourself. If you’re the asshole posting up mean shit on people’s posts, c’mon. Grow up man. Go channel that energy into something more productive!

Wishing you all inner peace and happiness this new year!

Beef Patties (GF, DF, Vegan)

celéac corner

Everyone loves beef patties, myself included. While I was on the elimination diet, I decided to experiment with my ingredients and came up with a gluten free, dairy free (could be made vegan/vegetarian) version that is still equally as delicious.

I subbed the beef in the patties for turkey the first time I made them. But you could stuff these patties with vegetarian or vegan options, or whatever your little heart desires. 🙂
What You will need:
For the crust:
1 cup of brown rice flour
1 cup of GF oat flour (or can sub with Sorghum flour)
1/2 cup of arrowroot flour
1 tsp xanthan gum
1 tsp salt
2 tsps turmeric (this is optional but helps to give the yellow colour in beef patties)
1/2 cup of cold hard vegan butter, or 1/4 cup + 2 tbsps of olive oil
* If you aren’t vegan, gluten free, dairy free, feel free to use traditional butter.
3/4 cup ice water
For the filling:
1/4 pound (250 grams) of raw ground beef (I used turkey)
1/4 cup onions finely diced
1/4 tsp curry powder
1/4 tsp dried thyme
1/4 tsp salt
1/4 tsp ground pepper

In a large bowl, pour in all dry ingredients.
* For the oat flour, if you don’t have it feel free to grind your own which is what I did. 🙂
Whisk them all together for a couple minute to ensure that the flours are well incorporated.
Create a hole in the middle of the bowl and pour in your olive oil, (or whichever oil/butter you decide to use) and your cold water. This allows you to mix the solids with the liquids gradually and achieve the texture we are looking for for the dough. Once you have your dough, let it sit in the fridge for an hour.

In the meantime, you can prep your filling by mixing the onion and spices into your meat.

you can cook that on medium heat and set it aside.
Preheat oven to 350-400 degrees. While waiting, take the dough out of the fridge and roll it out onto parchment paper. To make it easier, I also placed a parchment paper on top for a smoother glide. Take any circular shaped bowl or cut out and cut out as many as you can. Place just enough meat into your dough so that you can fold it over into a half moon shape. Use a fork to create the indents on the outer rim of the patties.

Place in the oven for 25 minutes or until patties start browning and seem to have crusted a bit on top et voila! There you have it Gluten Free, Dairy Free, or Vegan (if you choose)!
Patties for everyone to enjoy! 🙂

I hope you guys enjoy this recipe and let me know if there is anything else you would like me to try!

Happy eating,

ISN’T SHE GORGEOUS? Just look at those eyeeees😍.

Fancy/Casual Everyday Outfit
This look is super simple, I just paired together some jeans and a plain black T and switched up my jacked to get a little bit of a different look. The bomber I’d wear for a more casual look, and the trench coat I’d wear if I’m going for a little bit of a fancier look. You could also switch up the shoes if you’d like, but I thought these ones matched well with both looks and they’re super cute!
Ps. Mind the basic white girl poses. Had to have my Chestnut Praline🙌🏽
Top: Forever 21
Jeans: Hollister
Jacket: Mendocino (Bomber), Urban Planet (Trench Coat)
Shoes: ALDO

But what am I lookin’ atttttt?

Cognac and Fringes

I don’t know about you guys but I love this colour for fall! I’ve also had these fringe heels for a while now but haven’t really gotten the chance to wear them. Despite the open toes I think they’re so cute for fall (too bad it’s cold AF in Canada and fall lasts like -1 days :)). Also instead of this crochet throw-over you could replace it with a trench coat or cardigan!
Top: Urban Planet
Jeans: Hollister
Throw-Over: H&M
Shoes: Urban Planet
Did she finish my drink…..

Ok this cup needs to go..

Burnt Orange SZN

These sleeveless vests have been so popular lately and not to mention this burnt orange colour. This outfit is so perfect for fall and you can dress it up or dress it down with the shoes and even by adding some jewelry!
Vest: Dynamite
Top: Sirens
Jeans: Sirens
Shoes: ALDO

Classic Nicole pose

School Girl Outfit

So I had these cute overalls and I was contemplating whether or not I’d be able to wear them in the fall/winter, but then I thought why not? Let me just pair them with knee highs and a turtle neck :). Then I realized how perfect this outfit is for school, I totally looked like a 10 year old but that’s okay cause my outfit is cute!!!
Top: Urban Planet
Overalls: H&M
Knee High Socks: ALDO
Shoes: Ardene

AND THAT IS ALL. Thank you so much for taking the time to read this post, I hope you enjoyed it and maybe got some sort of inspiration 🙂

Fall Wedding – My 3 Wedding Looks

celéac corner

I’m sure you guys noticed through my Instagram that we recently had a wedding and what girl doesn’t love weddings?!

It’s the perfect opportunity to get all glammed up, and dressy while celebrating two lovely people! 🙂
Now I don’t know about you guys, but my family goes all out which means a pre wedding party, morning pictures, and then finally the actual wedding itself. Therefore, we each wound up with 3 separate outfits. So here’s some details about the outfits I wore! Enjoy! ❤ 🙂

Look #1: The night before
This first look I put together for the night before the wedding. We had a party at my cousins which is a tradition in Lebanese culture.

For Makeup, I had my lovely sisssy help me out on the eyes because I was running low on time and she’s amazing obviously. 🙂

Tarte 12 Hr Amazonian Clay Foundation in Medium Tan Honey
Tarte Contour Stick
Tarte Maracuja Creaseless Concealer
Anastasia Beverly Hills Contour Palette

**You guys can probably guess I kind of love Tarte and there is a reason for that, that I will soon touch on in another blog post. BUT anywaysssss.. for the purpose of this blog post I will carry on. 🙂

On the eyes: I can’t remember which palette we used but we used a mix of black and purple shades to achieve a purple smokey eye. For eyeliner I used Tarte’s Tarteist Clay Liner in my water line.

Lashes: Ardell’s Demi Wispies

Lips: Tarte’s Namaste matte liquid lipstick

For the hair, I used a donut bun in order to get the bun sleek and even.
I also used Hair wax and spray to pull the hair back. For Hair wax, I used the Got 2 Be wax and for hairspray, I used Garnier Fructis. Make sure to brush through the product once applied on your hair in order to get it as sleek as possible. 🙂

Dress: Guess
Earrings : Aldo
Shoes: Steve Madden

Look #2: The morning of
I wore this outfit the morning before the wedding to take pictures. I tried to go for a softer look in the morning, so I could take it to a more dramatic one into the evening.

Tarte 12 Hr Amazonian Clay Foundation in Medium Tan Honey
Tarte Contour Stick
Tarte Maracuja Creaseless Concealer
Anastasia Beverly Hills Contour Palette
Anastasia Beverly Hills Glow Palette for Highlight

On the Eyes:
Too Faced Chocolate Palette for a softer morning eyeshadow look.
Tarte Tarteist Clay Paint Eyeliner (My favorite!).

Lips: Tarte’s Namaste matte liquid lipstick

Hair: Done by Steven Amodeo at Local J Hair salon in Thornhill.

Dress: Betsy and Adam Found at They Bay
Shoes: Barbie Collection found at Town Shoes

Look #3 : The Wedding
This was definitely my favourite look so obviously, I was going to save the best for last.

Tarte 12 Hr Amazonian Clay Foundation in Medium Tan Honey
Tarte Contour Stick
Tarte Maracuja Creaseless Concealer
Anastasia Beverly Hills Contour Palette
Anastasia Beverly Hills Glow Palette for Highlight

On the eyes: I decided to create a Halo eye using a combination of makeup products. I first used the Modern renaissance palette. I used plum tones in the crease, outer V, as well as the inner corner and kept building it up until it was as dark as I liked. I then went over it with a black blending it in to give it that darker smokey look leaving the middle of your lid completely empty. In the middle, I filled my lid with a golden eyeshadow stick by NYX. I then added some lash glue and applied a loose Golden Glitter from mac to make it pop a little more.

For liner I used, Tarte’s Tarteist Clay Paint Eyeliner.

Lips: Tarte Namaste Matte Liquid Lipstick

Lashes: Ardell Demi-Wispies

Hair: Done by Steve Amodeo at Local J Hair in Thornhill.

Dress: Boutique 1861 in Montreal
Earrings: Aldo
Shoes: Steve Madden

That’s it guys! 🙂
I know it wasn’t anything too extensive, but I hope this wasn’t too dull for you guys and hopefully some of you liked it! 🙂

NEW Gluten Free products that I am excited about

celéac corner

Hey guys,
So in this post, I want to talk about some NEW Gluten Free products I have come across in the last couple months that I have been really excited about.

Here’s a video if you guys are interested in seeing the products and what I have to say. Otherwise, you could just read down below. 🙂

Product #1 : Gluten Free Cereal – Lucky Charms and Cheerios

This summer, I came across Gluten Free Lucky Charms and Cheerios! 🙂
That was one of the most exciting things for me because I used to eat both of these as a kid.
Unfortunately the Lucky Charms aren’t available in Canada, or not yet anyways but I was in New York at the time, so I grabbed a box from there. On positive note, the Cheerios are widely available in many grocery stores across Canada in all of the flavours which is great. There is a potential downside to this though. Around the end of the summer, General Mills recalled their Cheerios because there was an issue with some wheat being present in the boxes which is a huge concern for us celiacs.

Now, I have heard that this recall issue has been resolved and that they are now safe but I am not one hundred percent sure if that statement stands or not. If anyone knows what is the final say, please comment below or let me know because I would be interested in knowing whether I could purchase them or not. For those of you interested, here are two links one Canada specific and the other one just generally speaking about the issue with the Cheerios recall.

Product #2: Gluten Free Pita Bread – Wooden Bakery Lebanon

This product I was super excited about because I LOVE pita bread and haven’t had it since the last time I was in Lebanon which was nearly 2 years ago. The Wooden Bakery just recently came out with a new line of gluten free breads safe for celiacs. This includes, pita bread and tannour bread. This is amazing news because us Lebanese people love our pita. I am so proud of my homeland for taking initiative and providing us with some traditional products that are safe for us to eat so thank you Wooden Bakery! 🙂

Product #3 : Gluten Free Cake – Inspired by Happiness Cookies and Cream Cake

This is the final product I have for you guys right now. Unfortunately the cake didn’t make it into my product review video because I only found it after having filmed the video but nonetheless, it is AMAZING. I am in love with this cake and it is definitely hands down one of the best gluten free cakes I have ever had. I found it at the Longo’s in Vaughan. For some reason, it is not available at all Longo’s but make sure to check your local Longo’s or Sobey’s because when I emailed the company I was told these two grocery stores would carry them. 🙂 Seeing as this is a product from the states, I am sure it is more widely available there.

For a store locator you can click this link :

That’s it as far as new products I have come across and enjoyed. Do any of you know of some delicious Gluten Free treats that I should try? Please let me know in the comments, or shoot me a message. 🙂

Happy eating,
xox Léa S.
